Savoury Cheese And Walnut Loaf


100 g/4 oz self-raising unbleached white flour
100 g/4 oz granary flour
1 teaspoon baking powder
50 g/2 oz polyunsaturated margarine
100 g/4 oz Cheddar cheese, grated
2 eggs, beaten
150 ml/1/4 pint skimmed milk
2 teaspoons wholegrain mustard
75 g/3 oz walnuts, chopped


Preheat the oven to moderately hot (190 °C/375 °F, Gas Mark 5). Place the flours in a bowl with the baking powder. Rub in the margarine until the mixture resembles fine breadcrumbs, then stir in the grated cheese.


Beat together the eggs, milk and mustard and stir into the flour with the walnuts. Mix to a stiff dough.


Spoon into a greased 450 g/I lb loaf tin and bake in the oven for 45 to 50 minutes or until firm and risen. Cool on a wire rack. If you don't have any self-raising flour, use plain flour and increase the quantity of baking powder to 2 teaspoons.


MAKES one 450 g/l lb loaf
