Oatmeal Crunchies


225 g/8 oz plain wholemeal flour
75 g/3 oz medium oatmeal
75 g/3 oz bran
150 g/5 oz Muscovado sugar
1/2 teaspoon ground ginger
1/2 teaspoon ground mixed spice
100 g/4 oz polyunsaturated margarine
about 150 ml/1/2 pint cold water


Put the dry ingredients in a bowl and mix well. Rub in the margarine until the mixture resembles coarse breadcrumbs, then add enough water to make a stiff dough.


Turn the dough out on to a lightly floured surface, then roll out to 1 cm// inch thickness. Stamp out about 48 rounds with a § cm/21/2 inch biscuit cutter.


Place on greased baking sheets, then bake in a preheated moderate oven (180 °C/350 °F, Gas Mark 4) for 25 minutes. Transfer to a wire rack and leave to cool.
