Oatmeal And Peanut Biscuits


50 g/2 oz polyunsaturated margarine
75 g/3 oz crunchy peanut butter
25 g/1 oz Muscovado sugar
1 large egg
75 g/3 oz self-raising flour
75 g/3 oz medium oatmeal
milk for brushing


Preheat the oven to moderately hot (190 °C/375 °F, Gas Mark 5).


Cream together the margarine, peanut butter and sugar. Beat in the egg, then stir in the flour and oatmeal to make a stiff dough. Turn on to a floured surface and roll out to a 5 mm/1/4 inch thickness. Using a 5 cm/2 inch cutter, stamp out biscuits.


Place on a greased baking tray. Brush with milk and cook in the oven for 10 to 15 minutes. Cool on a wire rack.
