Muesli Flapjacks


150 g/5 oz polyunsaturated margarine
75 g/3 oz Muscovado sugar
1 tablespoon honey
225 g/8 oz muesli
50 g/2 oz hazelnuts, chopped


Heat the margarine gently in a pan until melted. Remove from the heat and stir in the sugar and honey. Then add the muesli and nuts and mix thoroughly.


Press the mixture firmly into a greased 18 cm/7 inch square cake tin. Bake in a preheated moderately hot oven (190 °C/375 °F, Gas Mark 5) for 25 minutes. Mark into 9 squares while still hot, then leave in the tin until almost cold. Transfer carefully to a wire rack and leave to cool completely. MAKES 9
