Muesli Cake


175 g/6 oz muesli
100 g/4 oz molasses sugar
175 g/6 oz sultanas
2 tablespoons malt extract
250 ml/8 fl oz apple juice
2 cooking apples, peeled, cored and grated
175 g/6 oz plain wholemeal flour
3 teaspoons baking powder
8 walnut halves


Place the muesli, sugar, sultanas, malt extract and apple juice in a mixing bowl and leave to soak for 30 minutes. Add the grated apple and wholemeal flour, sift in the baking powder and mix together thoroughly.


Turn into a lined and greased 18 cm/7 inch round cake tin and arrange the walnuts around the edge. Bake in a preheated moderate oven (180 °C/350 °F, Gas Mark 4) for 11/2 to 'PA hours, or until a skewer inserted into the centre comes out clean. Leave in the tin for a few minutes, then turn on to a wire rack to cool.


MAKES one 18 cm/7 inch cake
