Honey Fruit Loaf


75 g/3 oz polyunsaturated margarine
75 g/3 oz Muscovado sugar
1 egg, beaten
2 tablespoons honey
225 g/8 oz self-raising wholemeal flour
1/4 teaspoon salt
1 teaspoon ground mixed spice
175 g/6 oz mixed dried fruit
4 tablespoons skimmed milk


Cream the margarine and sugar until light and fluffy, then beat in the egg and honey. Stir in the flour, salt and spice, then beat in the fruit and milk until thoroughly mixed.


Spoon the mixture into a greased 750 g/11/2 lb loaf tin and bake in a preheated moderately hot oven (190 °C/375 °F, Gas Mark 5) for 45 minutes. Turn out on to a wire rack and leave to cool.


MAKES one 750 g/P/2 lb loaf
