Honey Crisps
100 g/4 oz polyunsaturated margarine
100 g/4 oz Demerara sugar
75 g/3 oz honey
250 g/9 oz plain wholemeal flour
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon bicarbonate of soda
Beat together the margarine, sugar and honey until the mixture is light and fluffy. Stir in the remaining ingredients, mixing well. (The dough will be stiff and dry.) Shape a teaspoonful of the dough into a ball and place on an ungreased baking sheet. Continue until all the mixture is used.
Bake in a preheated moderately hot oven (190 °C/375 °F, Gas Mark 5) for 10 to 12 minutes. Allow to cool on the baking sheet for 1 minute and then transfer to a wire cooling rack. Store in an airtight container.
