Cheese Crackers
225 g/8 oz Cheddar cheese, grated
50 g/2 oz Parmesan cheese
100 g/4 oz polyunsaturated margarine
3 tablespoons water
150 g/5 oz plain unbleached white flour
1/2 teaspoon mustard powder
pinch of salt
75 g/3 oz rolled oats
Beat together the cheeses, margarine and water until thoroughly blended. Sift together the flour, mustard and salt and fold into the cheese mixture, followed by the rolled oats.
Shape the dough into a roll about 30 cm/12 inches long. Wrap securely in foil or greaseproof paper and refrigerate for about 4 hours.
Uncover and cut the roll into 5 mm/1/4 inch slices and transfer to a greased baking sheet. Flatten slightly with a fork then bake in a preheated moderately hot oven (200 °C/400 °F, Gas Mark 6) for 8 to 10 minutes or until the edges are light golden. Transfer to a wire rack and allow to cool. MAKES about 60
