Banana And Walnut Slices


100 g/4 oz polyunsaturated margarine
100 g/4 oz molasses sugar
2 eggs
100 g/4 oz plain wholemeal flour
2 teaspoons baking powder
2 bananas, mashed
100 g/4 oz walnuts, chopped


Cream the margarine and sugar together until light and fluffy. Beat in the eggs, one at a time, adding a tablespoon of flour with the second egg. Fold in the remaining flour and baking powder with the bananas.


Spread the mixture evenly in a lined and greased 20 cm/8 inch square shallow tin. Sprinkle with the walnuts and bake in a preheated moderately hot oven (190 °C/375 °F, Gas Mark 5) for 20 to 25 minutes until the cake springs back when lightly pr ;sled.


Leave in the tin for 2 minutes, then cut into 16 slices. Transfer to a wire rack to cool.


MAKES 16 slices


Variation


The same quantity of chopped almonds or hazelnuts may be used in place of the walnuts
