Apricot And Raisin Slices


50 g/2 oz raisins
3 tablespoons orange juice
50 g/2 oz polyunsaturated margarine
1 tablespoon honey
1 tablespoon golden syrup
225 g/8 oz digestive biscuits, crushed
1/2 teaspoon ground mixed spice
50 g/2 oz no-soak apricots, chopped


Place the raisins and orange juice in a bowl and leave to soak for 30 minutes.


Melt the margarine in a pan with the honey and syrup. Stir in the crushed biscuits, spice, soaked fruit and apricots, then mix well. Press into a greased 20 cm/8 inch loose-bottomed flan tin or cake tin. Allow to cool then chill before cutting into slices.
