Apple And Sultana Loaf


50 g/2 oz polyunsaturated margarine
50 g/2 oz dark soft brown sugar
1 egg, beaten
100 g/4 oz plain wholemeal flour
100 g/4 oz fresh wholemeal breadcrumbs
11/2 teaspoons baking powder
1/4 teaspoon ground cinnamon
V2 teaspoon ground mixed spice
V2 teaspoon grated nutmeg
100 g/4 oz sultanas
450 g/1 lb dessert apples, peeled, cored and
sliced
2 tablespoons apple juice


Preheat the oven to moderate (180 °C/350 °F, Gas Mark 4).


In a bowl, cream together the margarine and sugar until fluffy. Gradually beat in the egg. Fold in the flour, breadcrumbs, baking powder and spices. Stir in the sultanas, apple slices and juice. Press into a greased 450 g/1 lb loaf tin. Bake in the oven for 1 hour or until firm and slightly risen. Cool on a wire rack.


MAKES one 450g/1 lb loaf
