Stuffed Tomato Salad
4 large or 6 medium tomatoes
1 dessert apple
finely grated rind of 1 orange
juice of 1/2 orange
225 g/8 oz cottage cheese
2 tablespoons sultanas
2 tablespoons chopped walnuts
1 tablespoon snipped chives or finely chopped
spring onions
salt
freshly ground black pepper
1 small lettuce
Cut the tops off the tomatoes and set aside. Scoop out the centres of the tomatoes, then turn them upside down and leave to drain.
Meanwhile, chop the apple and discard the core. Put the apple in a bowl, sprinkle with the orange rind and juice, then add the remaining ingredients, except the lettuce. Fold gently to mix.
Divide the mixture equally between the tomato cups. Arrange the lettuce leaves on individual serving plates. Place a tomato on each plate and top with the reserved lids. Serve cold.
