Smoked Cod Roe Mousse


175 g/6 oz smoked cod's roe, skinned
50 g/2 oz cottage cheese
finely grated rind of 1/2 lemon
salt
freshly ground black pepper
2 tablespoons olive oil
2 hard-boiled eggs, shelled
1 tablespoon coarsely chopped parsley


Put the cod's roe into a blender or food processor with the cottage cheese, lemon rind, salt and pepper to taste arid the olive oil; blend until smooth.


Separate the yolks from the whites of the hard- boiled eggs; add the yolks to the cod's roe
