Prawns And Scallops In Garlic
25 g/1 oz polyunsaturated margarine
2 tablespoons polyunsaturated vegetable oil
2 cloves garlic, peeled and crushed
225 g/8 oz peeled prawns
8 shelled scallops, halved
2 tablespoons chopped parsley
juice of I/2 lemon
Heat the margarine and oil in a frying pan, add the garlic and fry for 2 minutes. Add the prawns and scallops and cook quickly for 2 minutes, or until the scallops are just tender.
Stir in the parsley and lemon juice and serve immediately.
